The Machines:
Our lab features top of the line, state of the art, Carpigiani batch freezers which provide a wide range of precise production options. This versatiliy allows us to offer both a unique selection of perfectly frozen gelato styles, as well as freezer stable, pre-packaged carry out gelato cakes, confections and containers.
The Production:
All our gelatos, sorbets and alternative diet flavors are hand made. The majority of our variegates and nut pastes are also made in house. Our gelatos also feature proprietorially developed blends of vegan stabilizers formulated for their specific environments which maximize their efficacy while limiting their concentration.
The Producer:
With nearly two decades of mixology and discerning craft bar management experience, jiggered with 1 part sommelier, one part neurotic perfectionist,a dash or two of bitters, Italian training and an 8 year quest of developing this concept and these flavors, it has been both deeply humbling and a tremendous honor to bring this vision to light.
